BBQ TURKEY MEATLOAF

2 1⁄2 lbs — extra-lean ground turkey

1⁄2 cup — zucchini, finely chopped

1 cup — spinach, finely chopped

1 — onion, minced

1 — clove garlic, minced

2 tbsp — tomato paste

2 tbsp — dijon mustard

1/2 cup — BBQ sauce (lowsugar variety)

2 — eggs

1 cup — gluten free, whole wheat bread crumbs

DIRECTIONS

1 Preheat oven to 425°F.

2 Put all ingredients together in a large bowl and mix well with your hands.

3 On 2 baking sheets lined with foil, spray with cooking olive oil spray. Fill pans with

meatloaf mixture and press down firmly. Cook for approximately 35 to 45 minutes

or until food reaches 135°F, as measured with a meat thermometer.

4 Remove from oven and let sit for at least 5 minutes to set and cool. Serve with a tablespoon of BBQ on top.
