
STREET CHICKEN TACOS
2 — tomatoes, chopped
8 ounces — boneless, skinless chicken breast, finely chopped
1/4 tsp — salt
1/4 tsp — freshly ground pepper
2 tsp — coconut oil, divided
1/2 cup — finely chopped white onion
2 cloves — garlic, minced
1 — small jalapeño pepper, seeded and minced
2 tsp — lime juice, plus lime wedges for garnish
2 tsp — chopped fresh cilantro
2 — scallions, chopped
6 — small corn tortillas, heated
1 — head of romaine lettuce, chopped
DIRECTIONS
1 Broil chicken breast for about 7 minutes.
2 Cook brown rice according to package instructions.
3 Steam asparagus.
4 Dice chicken, asparagus, tomato, and avocado.
5 Put rice on wrap and top with chicken, veggies, and goat cheese.
6 Fold and serve with salsa and 0% fat Greek Yogurt
