1\/3 cup \u2014 low-fat mayonnaise<\/p>\n\n\n\n

1\/3 cup \u2014 buttermilk or nonfat milk<\/p>\n\n\n\n

1\/3 cup \u2014 nonfat plain yogurt<\/p>\n\n\n\n

2 tbsp \u2014 tarragon vinegar or white vinegar<\/p>\n\n\n\n

1 tbsp \u2014 Dijon mustard<\/p>\n\n\n\n

1\/2 tsp \u2014 salt<\/p>\n\n\n\n

1\/2 tsp \u2014 freshly ground pepper<\/p>\n\n\n\n

1\/4 cup \u2014 crumbled blue cheese<\/p>\n\n\n\n

8 \u2014 large eggs<\/p>\n\n\n\n

6 cups \u2014 baby spinach<\/p>\n\n\n\n

4 \u2014 strips of bacon, cooked and crumbled<\/p>\n\n\n\n

4 tbsp \u2014 Creamy Blue Cheese Dressing, divided filet mignon<\/p>\n<\/div>\n\n\n\n

DIRECTIONS<\/p>\n\n\n\n

1 To prepare dressing: Whisk mayonnaise, buttermilk (or milk), yogurt,<\/p>\n\n\n\n

vinegar, mustard, salt and pepper in a medium bowl until smooth. Add<\/p>\n\n\n\n

cheese and stir, mashing with a spoon until the cheese is incorporated.<\/p>\n\n\n\n

2 To prepare salad: Place eggs in a single layer in a saucepan; cover with<\/p>\n\n\n\n

water. Bring to a simmer over medium-high heat. Reduce heat to low,<\/p>\n\n\n\n

cover and cook at the lowest simmer for 10 minutes. Pour off the hot water<\/p>\n\n\n\n

and run cold water over the eggs until they are completely cooled. Peel<\/p>\n\n\n\n

the eggs; discard 6 of the yolks. Chop the remaining yolks and whites.<\/p>\n\n\n\n

3 Toss spinach and 2 tablespoons of the dressing in a large bowl.<\/p>\n\n\n\n

Divide between 2 plates. Top with the chopped eggs, bacon,<\/p>\n\n\n\n

beets, carrots and pecans. Drizzle with 2 more tablespoons<\/p>\n\n\n\n

dressing. (Refrigerate the extra dressing for up to 1 week.)<\/p>\n\n\n\n
