1⁄4 cup — lemon juice
1⁄2 tbsp — lemon zest
2 tbsp — Dijon mustard
1 tbsp — dried tarragon
1 — scallion, chopped
1⁄4 tsp — pepper
2 tbsp — olive oil
2 tbsp — fresh chopped dill
2 — halibut filets (about 6 oz each)
Nonstick cooking spray
DIRECTIONS
1 Combine first six ingredients in a shallow dish. Stir in oil and whisk well.
2 Add halibut and turn to coat. Cover and refrigerate 30 minutes.
3 Coat a grill rack or pan with nonstick cooking spray and cook fish over high heat for 5 to 7 minutes per side.
If using oven, broil for 7-9 minutes, or until golden looking. Serve with lemon wedges and on a bed of greens.
